This cake is bursting with buttery goodness! It's very moist and good with whatever icing you want to put with it. The fudgy frosting just happens to be my favorite! Makes two layers. And again, please use butter only.

Ingredients

  • 2/3 cup butter, softened
  • 1 1/8 cups granulated sugar
  • 2 teaspoons pure vanilla extract
  • 2 large eggs
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 2 cups sifted flour or pastry flour
  • 1 cup whole milk
  • FUDGY FROSTING
  • 1/3 cup butter, softened
  • 2 teaspoons pure vanilla extract
  • 1/4 cup baking cocoa
  • 1 dash salt
  • 2 cups confectioners' sugar
  • 5 tablespoons milk or cream to consistency, may need more or less

How To Make my mom's butter cake with fudgy frosting

  • Cream butter, sugar, salt, and vanilla.
    Step 1
    Preheat your oven to 350 degrees F. Grease and flour a 9''x 9'' x 2'' baking pan. Cream together the butter, sugar, salt, and vanilla.
  • Add eggs.
    Step 2
    Add the eggs and mix well.
  • Add baking soda and flour.
    Step 3
    Add the baking powder and some of the flour.
  • Alternate blending with milk.
    Step 4
    Blend alternately with the milk.
  • Adding remaining flour.
    Step 5
    Add the rest of the flour. Mix well.
  • Remaining milk added.
    Step 6
    Add the rest of the milk and gently beat by hand for two minutes.
  • Batter poured into a cake pan.

    Pour batter into the prepared baking pan.
  • Baked butter cake cooling.
    Step 8
    Bake for 35 minutes. This will be moist. Do not overbake. Allow the cake to cool.
  • Combine softened butter, vanilla, baking cocoa, salt, and confectioners' sugar.
    Step 9
    To make the fudgy frosting, combine softened butter, vanilla, baking cocoa, salt, and confectioners' sugar.
  • Frosting consistency.
    Step 10
    Add milk or cream, little by little, until you get the right consistency for spreading.
