This is a yelllow fruit cake. When sliced it looks like stained glass. Wonderful flavor and everyone's favorite.

Ingredients

  • 2 cups sugar
  • 1 pound butter (no substitute)
  • 7 - egg yolks, well beaten
  • 4 cups all purpose flour
  • 1 1/2 ounces lemon extract
  • 1 ounce vanilla extract
  • 1 pound red cherries, candied (cut in half)
  • 1 pound green cherries, candied (cut in half)
  • 1 pound pineapple candied (chopped)
  • 1 1/2 pounds pecans, in pieces
  • 7 - egg whites,beaten till stiff

How To Make my grandma's fruit cake

  • Step 1
    Cream butter and sugar then add egg yolks and most of flour and extract.
  • Step 2
    Dredge fruit and nuts with 1 cup flour.
  • Step 3
    Pour butter mixture over fruit and mix well.
  • Step 4
    Fold (with hands) egg whites into batter.
  • Step 5
    Bake 275 degrees 1 1/2 to 2 hours in 10 inch greased and floured pan or loaves. Line bottom of pans with wax paper.
