Ingredients
- 2 cups all purpose flour
- 2 cups white sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 3 cups shredded baby carrots (ready to eat baby carrots are sweeter)
- 1 cup vegetable oil
- 4 - large eggs
- CREAM CHEESE FROSTING
- 3 ounces cream cheese
- 1/4 cup butter or margerine
- 2 cups sifted powdered sugar
- 1 teaspoon vanilla
- 1/2 cup chopped pecans or walnuts
How To Make my famous carrot cake

Step 1Grease and flour 13x9 pan and preheat oven to 325.

Step 2First: Cream together sugar, eggs, oil, vanilla, and carrots.

Step 3Second: Add remaining dry ingredients, use sifter. Mix well for 2 minutes.

Step 4Third: Pour into greased 13x9 pan at 325 for about 55 minutes, or until wooden toothpick inserted comes out clean.

Step 5Beat together frosting ingrediants, EXCEPT NUTS, with handmixer (cream cheese and butter should be softened) SIFT POWDERED SUGAR. Frost cake when thoroughly cooled and sprinkle chopped nuts on top.
