Everyone who tries this says it's the best they've ever had---and it's VERY easy!!!

Ingredients

  • 2 cups all purpose flour
  • 2 cups white sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 3 cups shredded baby carrots (ready to eat baby carrots are sweeter)
  • 1 cup vegetable oil
  • 4 - large eggs
  • CREAM CHEESE FROSTING
  • 3 ounces cream cheese
  • 1/4 cup butter or margerine
  • 2 cups sifted powdered sugar
  • 1 teaspoon vanilla
  • 1/2 cup chopped pecans or walnuts

How To Make my famous carrot cake

  • Step 1
    Grease and flour 13x9 pan and preheat oven to 325.
  • Step 2
    First: Cream together sugar, eggs, oil, vanilla, and carrots.
  • Step 3
    Second: Add remaining dry ingredients, use sifter. Mix well for 2 minutes.
  • Step 4
    Third: Pour into greased 13x9 pan at 325 for about 55 minutes, or until wooden toothpick inserted comes out clean.
  • Step 5
    Beat together frosting ingrediants, EXCEPT NUTS, with handmixer (cream cheese and butter should be softened) SIFT POWDERED SUGAR. Frost cake when thoroughly cooled and sprinkle chopped nuts on top.
