all purpose flour
2 c
white sugar
1 tsp
baking powder
1 tsp
baking soda
1 tsp
1 tsp
3 c
shredded baby carrots (ready to eat baby carrots are sweeter)
1 c
vegetable oil
large eggs


3 oz
cream cheese
1/4 c
butter or margerine
2 c
sifted powdered sugar
1 tsp
1/2 c
chopped pecans or walnuts

How to Make My Famous Carrot Cake


  • 1Grease and flour 13x9 pan and preheat oven to 325.
  • 2First: Cream together sugar, eggs, oil, vanilla, and carrots.
  • 3Second: Add remaining dry ingredients, use sifter. Mix well for 2 minutes.
  • 4Third: Pour into greased 13x9 pan at 325 for about 55 minutes, or until wooden toothpick inserted comes out clean.
  • 5Beat together frosting ingrediants, EXCEPT NUTS, with handmixer (cream cheese and butter should be softened) SIFT POWDERED SUGAR.
    Frost cake when thoroughly cooled and sprinkle chopped nuts on top.
