Ingredients
- 2 cups sugar
- 1 1/4 cups oil
- 4 large eggs
- 1 teaspoon vanilla extract
- 4 cups carrots, grated
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 2-3 teaspoons cinnamon ( i use 3)
- 1 cup optional : raisins, walnuts
- - for the glaze :
- 2 - 3 cups powdered sugar
- 1 teaspoon cinnamon
- 1-4 teaspoon liquid..milk or coffee or rum or apple juice whatever you like

Step 1Grease pan(s) 350 *....use 2 bowls... 1 st bowl put in the dry ingredients.flour, salt, baking powder and baking soda, cinnamon stir , set aside

Step 22nd bowl cream together sugar and oil well..then add eggs 1 at a time, then vanilla...while mixing add the dry ingredients from the 2nd bowl 1/4 cup at a time until all combined

Step 3add the carrots, raisins, walnuts, stir by hand.pour in pan(s) bake 1 hr, it could take longer depending on your oven, be sure to check for doneness, because this cake is very moist. Tip: flour your raisins alittle so they stay in the mix and not go to the bottom when baking...

Step 4let the cake cool, mine took about 30 minutes, then invert and glaze....you can also use cream cheese frosting if you warm it up a little to make it easy to drizzle.
