muz's rhubarb cake

This is an heirloom recipe that has been a family favorite for 4 generations. There is no time given for the meringue so I just keep a close eye on it until it has lovely golden brown color. This is my favorite rhubarb recipe of all time.

Ingredients
- CRUST
- 2 cups all purpose flour
- 3 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 cup chopped walnuts or pecans (optional)
- 1/2 cup plus 2 tablespoons room temperature butter
- FILLING
- 1-3/4 cup sugar
- 4 tablespoons flour
- 3 large eggs yolks, beaten
- 4 cups rhubarb, diced
- MERINGUE
- 5 large egg whites
- 3/4 cup sugar
How To Make muz's rhubarb cake

Step 1Mix crust ingredients well in mixer on low speed. Add nuts, if using. Press on sides and bottom of 9 X 12" pan.

Step 2Mix filling ingredients well by hand. Pour over crust. Bake at 350 for 40 minutes.

Step 3Meanwhile, combine meringue ingredients. Take cake out of oven and spread meringue evenly over the whole surface of the fruit.

Step 4Bake until meringue starts to brown.
