This is a recipe that a friend of mine gave me years ago. She brought this cake to one of our monthly luncheons and it quickly dissappeared. She was sweet enough to share her recipe with me. The pictures shown were taken by fellow JAP member Cindy Strawser...

Ingredients
- CAKE:
- 1 box lemon cake mix
- 3/4 cup canola oil
- 10 ounces mountain dew
- 1 box instant lemon pudding mix
- 4 large eggs
- ICING:
- 1 cup sugar
- 1 large can crushed pineapple with juice
- 3 tablespoons cornstarch
- 1/2 stick butter
- 1 cup shredded coconut
How To Make mountain dew cake

Step 1Pre-heat the oven to 350 F

Step 2In a medium bowl, add cake mix, oil, pudding mix and eggs. Mix to combine.

Step 3Add the Mountain Dew; beat with electric mixer on medium speed for 2 or 3 minutes.

Step 4Pour batter into prepared bundt cake pan (sprayed with cooking spray with flour.) My handwritten recipe suggested a bundt pan but I really prefer to use a 9 x 13 cake pan.

Step 5Bake for 35 to 40 minutes or until a toothpick inserted in the cake comes out clean.

Step 6In a medium saucepan, combine sugar, pineapple and cornstarch. Stir and cook until thick.

Step 7Remove from heat and add butter and coconut. Stir to combine well. Slowly pour hot icing over cake.
