mother's pumpkin pie cake
This is my mother-in-law's recipe. She wanted to do something different for Thanksgiving on year and made this delicious cake. However, my children (aka the tradition police) were NOT happy with the menu change.

Ingredients
- 4 - eggs, slightly beaten
- 1 3/4 cups sugar
- 1 teaspoon salt
- 1 box yellow cake mix
- 1 cup chopped pecans
- 1 (16 oz) can pumpkin
- 2 teaspoons pumpkin pie spice
- 1 (13 oz.) can evaporated milk
- 2 sticks butter, melted
How To Make mother's pumpkin pie cake

Step 1Preheat oven to 350 degrees.

Step 2Spray a 9 x 13 inch Pyrex baking dish with cooking spray.

Step 3In a bowl, mix eggs, pumpkin, sugar, pumpkin pie spice salt and evaporated milk in the order listed.

Step 4Pour into the baking dish.

Step 5Sprinkle the dry cake mix over this filling.

Step 6Carefully drizzle the melted butter ove the top to cover it well.

Step 7Bake for 45 minutes or until a toothpick inserted in the center comes out clean.

Step 8Cool for half an hour before cutting. Top with whipped cream to serve if desired.
