"mother's" black chocolate cake

My mom regularly made this cake... it is moist, chocolately, and very easy. You can frost if you like, but it doesn't really need more than a dusting of powdered sugar. (I still bake it in the same pan she used all those years ago).

Ingredients

  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 2 - eggs
  • 1 cup boiling water
  • 1 teaspoon vanilla
  • 2 cups flour
  • 2 cups sugar
  • 1/2 cup cocoa, unsweetened
  • 1 tablespoon baking soda
  • 1/4 teaspoon salt

How To Make "mother's" black chocolate cake

  • Step 1
    Preheat oven to 350 and prepare a 13x9 pan by spraying with cooking spray.
  • Step 2
    in large bowl sift together sugar, flour, cocoa, baking soda, and salt. set aside.
  • Step 3
    in medium bowl whisk buttermilk, oil, and eggs.
  • Step 4
    Add wet ingredients to dry and stir until thoroughly mixed. Add boiling water to which 1 tsp vanilla has been added. Stir to combine.
  • Step 5
    Pour into 13x9 pan which has been sprayed with cooking spray.
  • Step 6
    Bake at 350 for 25 to 30 minutes or until cake tester comes out clean.
