"Mother's" Black Chocolate Cake

My mom regularly made this cake... it is moist, chocolately, and very easy. You can frost if you like, but it doesn't really need more than a dusting of powdered sugar. (I still bake it in the same pan she used all those years ago).

Ingredients

  • 1 c
    vegetable oil
  • 1 c
    buttermilk
  • 2
    eggs
  • 1 c
    boiling water
  • 1 tsp
    vanilla
  • 2 c
    flour
  • 2 c
    sugar
  • 1/2 c
    cocoa, unsweetened
  • 1 Tbsp
    baking soda
  • 1/4 tsp
    salt

How to Make "Mother's" Black Chocolate Cake

Step-by-Step

  1. Preheat oven to 350 and prepare a 13x9 pan by spraying with cooking spray.
  2. in large bowl sift together sugar, flour, cocoa, baking soda, and salt. set aside.
  3. in medium bowl whisk buttermilk, oil, and eggs.
  4. Add wet ingredients to dry and stir until thoroughly mixed. Add boiling water to which 1 tsp vanilla has been added. Stir to combine.
  5. Pour into 13x9 pan which has been sprayed with cooking spray.
  6. Bake at 350 for 25 to 30 minutes or until cake tester comes out clean.
