How to Make Mother Stern's Fluffy White Frosting
- Put egg whites and creme of tartar in mixing bowl and beat until stiff (but not dry)
- In a small saucepan put the sugar, corn syrup,water and salt. Stirring constantly, bring mixture to a boil and cook until the thin thread stage---that is a thin thread forms when lifting the spoon out of the pan.
- Turn mixer on and slowly beat the hot syrup into the egg whites.
- Add vanilla and beat frosting until it is cool and stiff peaks will hold.
- Spread on cooled cake.
