This is one of my mom's oldest and most favorite cake recipes. She said I had to post it because it's one of the best cakes ever and everyone loves it. And it's very easy to make. You know it must be good because the recipe card is stained and faded. LOL

Ingredients For mom's favorite birthday cake

  • 1 box
    duncan hines yellow cake mix (plus ingredients listed on box)
  • 2 box
    (small) instant vanilla pudding or 1 large box
  • 8 oz
    cream cheese softened
  • 1-2 can
    (large can) crushed pineapple - drained
  • 1
    cool whip (i used low fat)
  • walnuts - chopped
  • marachino cherries -chopped (optional)

How To Make mom's favorite birthday cake

    Prepare cake mix as directed on box. (Mom's recipe card says to mix the cake mix with 1/4 cup of oil - this doesn't sound right to me, so I'm suggesting you just make the cake mix as directed on box.)

    Pour batter into a jelly roll pan. Cook at 350 degrees for 15 minutes - or until done. Let cool in the pan. (You'll serve it out of the pan.)

    Make the vanilla pudding as directed on box and beat in the cream cheese.

    When the cake is cooled, spread the drained pinapple evenly over cake. Top that with the pudding/cream cheese mixture and then top that with the Cool Whip. Sprinkle with chopped nuts and cherries, if desired.
