Mom's Favorite Birthday Cake
1 boxduncan hines yellow cake mix (plus ingredients listed on box)
2 box(small) instant vanilla pudding or 1 large box
8 ozcream cheese softened
1-2 can(s)(large can) crushed pineapple - drained
1cool whip (i used low fat)
·walnuts - chopped
·marachino cherries -chopped (optional)
How to Make Mom's Favorite Birthday Cake
- Prepare cake mix as directed on box. (Mom's recipe card says to mix the cake mix with 1/4 cup of oil - this doesn't sound right to me, so I'm suggesting you just make the cake mix as directed on box.)
- Pour batter into a jelly roll pan. Cook at 350 degrees for 15 minutes - or until done. Let cool in the pan. (You'll serve it out of the pan.)
- Make the vanilla pudding as directed on box and beat in the cream cheese.
- When the cake is cooled, spread the drained pinapple evenly over cake. Top that with the pudding/cream cheese mixture and then top that with the Cool Whip. Sprinkle with chopped nuts and cherries, if desired.
