This cheesecake bakes into it's own crust. It has been a family tradition to have this cheesecake for New Year's Day. My mom made it every year, and the card I use is written in her own pen and makes me feel as if she is still here with me. I serve the toppings on the side.

Ingredients

  • 16 ounces cream cheese, softened
  • 8 ounces sour cream
  • 1 pound cottage cheese, small curd
  • 1 1/2 cups granulated sugar
  • 4 - eggs, slightly beaten
  • 3 tablespoons corn starch
  • 3 tablespoons flour
  • 1 1/2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 cup butter, melted

How To Make mom's cheesecake

  • Step 1
    Grease a 9" spring form pan with butter. In large bowel, beat softened cream cheese with cottage cheese on HIGH SPEED until well mixed. Gradually beat in sugar. At LOW SPEED beat in beaten eggs, cornstarch, flour, lemon juice and vanilla. Beat in melted butter and sour cream.
  • Step 2
    Pour into prepared spring form pan and bake at 350 degrees for 1 hour and 10 minutes. Turn OFF oven and leave in oven for 2 hours. Remove from oven and allow to cool. Serve plain or with topping of your choice. Refrigerate.
