Ingredients

  • MOMS CARROT CAKE

  • 2 c
    granulated sugar
  • 2 1/4 c
    flour
  • 2 c
    grated carrots
  • 1 small can(s)
    crushed pineapple with the juice
  • 1 c
    coconut (optional)
  • 1 1/4 c
    vegetable oil
  • 2 tsp
    cinnamon, ground
  • 2 tsp
    baking soda
  • 1 tsp
    salt
  • 2 tsp
    vanilla extract
  • 3 large
    eggs
  • 1 c
    chopped walnuts

How to Make MOMS CARROT CAKE

Step-by-Step

  1. Put all of the ingredients in a bowl and beat 4 or 5 minutes. Bake at 350 degrees for 1 hour in a 9x13 pan. You may also add raisins if you like.
  2. FROSTING; 1 cup of butter or margarine, 1 - 4 ounce package of cream cheese, 1/2 # of powdered sugar, 1 tsp. vanilla, 1 cup of chopped walnuts. Beat until creamy, and frost the cake.
