Ingredients
- MOMS CARROT CAKE
- 2 cups granulated sugar
- 2 1/4 cups flour
- 2 cups grated carrots
- 1 small can crushed pineapple with the juice
- 1 cup coconut (optional)
- 1 1/4 cups vegetable oil
- 2 teaspoons cinnamon, ground
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 teaspoons vanilla extract
- 3 large eggs
- 1 cup chopped walnuts
How To Make moms carrot cake

Step 1Put all of the ingredients in a bowl and beat 4 or 5 minutes. Bake at 350 degrees for 1 hour in a 9x13 pan. You may also add raisins if you like.

Step 2FROSTING; 1 cup of butter or margarine, 1 - 4 ounce package of cream cheese, 1/2 # of powdered sugar, 1 tsp. vanilla, 1 cup of chopped walnuts. Beat until creamy, and frost the cake.
