Ingredients

  • MOMS CARROT CAKE
  • 2 cups granulated sugar
  • 2 1/4 cups flour
  • 2 cups grated carrots
  • 1 small can crushed pineapple with the juice
  • 1 cup coconut (optional)
  • 1 1/4 cups vegetable oil
  • 2 teaspoons cinnamon, ground
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 teaspoons vanilla extract
  • 3 large eggs
  • 1 cup chopped walnuts

How To Make moms carrot cake

  • Step 1
    Put all of the ingredients in a bowl and beat 4 or 5 minutes. Bake at 350 degrees for 1 hour in a 9x13 pan. You may also add raisins if you like.
  • Step 2
    FROSTING; 1 cup of butter or margarine, 1 - 4 ounce package of cream cheese, 1/2 # of powdered sugar, 1 tsp. vanilla, 1 cup of chopped walnuts. Beat until creamy, and frost the cake.
