Makes 12 large muffins or 13x9x2 cake pan
Ingredients
- 1 3/4 cups (plus 2 tsp) sugar
- 1 teaspoon cinnamon
- 1/2 cup (plus 2 tbsp) shortening
- 2 large eggs
- 3 cups flour
- 2 1/2 teaspoons baking powder
- 1 tablespoon salt
- 1 1/4 cups milk
- 1 1/2 tablespoons vanilla
- 2 cups frozen blueberries
How To Make mom's blueberry cake

Step 1Cream sugar & shortening in large bowl with mixer at low speed. Beat in eggs until fluffy. In seperate bowl combine flour, baking powder, cinn. & salt. Set aside 1/4 cup of flour mixture to coat blueberries later. Pour milk into a measuring cup & stir in the vanilla. W/mixer at medium speed, add flour mixture to shortening mixture alternately w/milk until blended. Toss blueberies in 1/2 cup flour mixture. Fold in blueberries along with any remaining flour. Pour batter into greased and floured pan. Sprinkle top with cinn.& sugar. Bake at 375 for 45-60 min. for cake. 30 min. for 12 large muffins
