So easy to make, yet so delicious. My mom would make this for my brother's birthday, and it was always gobbled up fast.

Ingredients

  • 2 cups sugar
  • 1-1/2 cup oil, i used canola oil
  • 4 large eggs
  • 2 teaspoons baking soda
  • 2 cups all purpose flour
  • 2 teaspoons cinnamon
  • 1 cup sweetened, flaked coconut
  • 3 cups grated carrots
  • 1 cup chopped walnuts
  • 1 - 8 oz pkg reduced-fat cream cheese, softened
  • 2 sticks butter, softened
  • 1 teaspoon vanilla
  • 4 cups powdered sugar

How To Make mom's best carrot cake

  • Step 1
    Heat oven to 350. Spray 2 8 or 9" cake pans w/ cooking spray. In lg bowl, beat sugar, oil, eggs, baking soda, flour, cinnamon, coconut, carrots and walnuts until combined.
  • Step 2
    pour batter evenly into pans. Bake 45-50 mins, or until a toothpick inserted in center comes out clean. Let cool.
  • Step 3
    In another lg bowl, beat cream cheese and butter until smooth. Beat in vanilla. Gradually add powdered sugar until combined. frost cake.
