Ingredients
- 2 cups sugar
- 1-1/2 cup oil, i used canola oil
- 4 large eggs
- 2 teaspoons baking soda
- 2 cups all purpose flour
- 2 teaspoons cinnamon
- 1 cup sweetened, flaked coconut
- 3 cups grated carrots
- 1 cup chopped walnuts
- 1 - 8 oz pkg reduced-fat cream cheese, softened
- 2 sticks butter, softened
- 1 teaspoon vanilla
- 4 cups powdered sugar
How To Make mom's best carrot cake

Step 1Heat oven to 350. Spray 2 8 or 9" cake pans w/ cooking spray. In lg bowl, beat sugar, oil, eggs, baking soda, flour, cinnamon, coconut, carrots and walnuts until combined.

Step 2pour batter evenly into pans. Bake 45-50 mins, or until a toothpick inserted in center comes out clean. Let cool.

Step 3In another lg bowl, beat cream cheese and butter until smooth. Beat in vanilla. Gradually add powdered sugar until combined. frost cake.
