mom's applesauce cake
No Image
My Mom got this recipe from a little German lady at Lake Quinault, WA, right after WWII. It was a constant in our house, when I was growing up, as it was my Dad's favorite! Mom served it unfrosted, as it was so nice and moist! Do not overbake, to prevent it becoming too dry.

-
1 cbutter, unsalted
-
2 csugar
-
2-1/2 cflour
-
2 tspcinnamon
-
1 tspground cloves
-
2 tspbaking soda
-
1 craisins
-
1 cchopped walnuts
-
2 chot applesauce

2large eggs
How To Make mom's applesauce cake
-
1Cream together butter and sugar.
-
2Add eggs and mix well,
-
3Sift together flour, cinnamon, cloves and baking soda, and add in to butter/sugar mixture. (It will be thick, like cookie dough.)
-
4Mix in raisins and nuts, and hot applesauce (I heat in small saucepan on stove, but microwave should work, also). Hot applesauce will thin down the dough into a batter.
-
5Pour into a 9" x13" baking pan (sprayed with Baker's Joy, or greased and floured)
-
6Bake at 350* for 45 to 50 minutes, until toothpick comes out clean. Start checking at 40 minutes. Cake is best if slightly underdone.
-
7Serve plain, dusted with powdered sugar, or frost with cream cheese icing. I grew up eating it plain.
