molasses spice cake

Fall is my favorite time of the year and it puts me in the mood to bake. This is one of my favorite fall cakes. It is sooo yummy and make you feel all good inside.

Ingredients

  • 1 cup butter, room temperature
  • 1 cup sugar
  • 3 - eggs
  • 1 cup molasses
  • 2 cups all purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cloves
  • 1 cup boiling water
  • 2 teaspoons baking soda
  • CREAM CHEESE ICING
  • 8 ounces cream cheese
  • 1/4 cup butter, softened
  • 1 teaspoon vanilla
  • 1 cup powdered sugar
  • 1 tablespoon molasses

How To Make molasses spice cake

  • Step 1
    In a mixing bowl cream butter with sugar, beating with electric mixer until light and fluffy. Add eggs, one at a time, beating well after each addition. Add molasses and blend well. In another bowl combine flour, salt, nutmeg, cloves, and cinnamon; stir well. Slowly add flour and spice mixture to creamed mixture, beating at low speed. Combine water with baking soda and add to cake batter, mixing well. Batter will be thin. Pour batter in to a greased and floured 13x9x2-inch baking pan. Bake at 350° for 35 to 45 minutes, or until a wooden pick or cake tester inserted in center comes out clean.
  • Step 2
    For icing...Beat cream cheese and butter until smooth. Add powdered sugar, vanilla and molasses and beat until combined and smooth. You can add a little milk if mixture is too thick. Ice cake when cooled.
