I know your thinking, "not another carrot cake recipe". However, I have made several, but this one is incredible. I have been making this for about 10 years. It comes out so moist. Enjoy!!!!

Ingredients

  • 2 cups grated carrots
  • 4 large eggs
  • 2 cups sugar
  • 1 1/2 cups wesson oil
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 tablespoons cinnamon (i usally use a bit more)
  • ICING FOR CAKE
  • 1 package cream cheese
  • 1 stick melted butter
  • 1 teaspoon vanilla
  • 1 box powdered sugar

How To Make moistest carrot cake ever!!

  • Step 1
    For the cake: mix carrots, sugar & eggs. Then add dry ingredients. Bake at 350 degrees for 1 hour and 15 minutes. I use the papmered chef stoneware 13 * 9 and it comes out great.
  • Step 2
    For the icing: mix ingredients and beat until smooth.
