I know your thinking, "not another carrot cake recipe". However, I have made several, but this one is incredible. I have been making this for about 10 years. It comes out so moist. Enjoy!!!!

Ingredients
- 2 cups grated carrots
- 4 large eggs
- 2 cups sugar
- 1 1/2 cups wesson oil
- 2 cups all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 tablespoons cinnamon (i usally use a bit more)
- ICING FOR CAKE
- 1 package cream cheese
- 1 stick melted butter
- 1 teaspoon vanilla
- 1 box powdered sugar

Step 1For the cake: mix carrots, sugar & eggs. Then add dry ingredients. Bake at 350 degrees for 1 hour and 15 minutes. I use the papmered chef stoneware 13 * 9 and it comes out great.

Step 2For the icing: mix ingredients and beat until smooth.
