This is great for the holidays. Just mix everything up the night before, then in the morning, bake it.

  • 2 c
  • 1 c
    whole wheat flour
  • 1-1/2 tsp
    baking powder
  • 1-1/2 tsp
    baking soda
  • 1 c
    butter, softened
  • 1-1/4 c
  • 3

    15 oz container part-skim ricotta cheese
  • 3/4 c
    chopped walnuts
  • 1/2 c
    packed light brown sugar
  • 2 Tbsp
    wheat germ
  • 1 Tbsp
  • 1 tsp
    ground nutmeg

How to Make Moist overnight coffee cake


  1. In lg bowl, combine the flours, baking powder and baking soda. In another bowl, beat butter for 30 seconds. Add sugar, beat until combined.
  2. Add eggs, one at a time, beating well after each addition. Beat in ricotta cheese. Beat in flour mix. Spread batter in a pan that has been lightly sprayed w/ cooking spray.
  3. In another bowl, combine nuts, brown sugar, cinnamon, wheat germ and nutmeg. Sprinkle over batter in pan evenly. Cover, refrigerate 24 hrs. The next day, pre-heat oven to 350. Uncover cake and bake for 35-40 mins, or until a toothpick inserted in center comes out clean.
