1In lg bowl, combine the flours, baking powder and baking soda. In another bowl, beat butter for 30 seconds. Add sugar, beat until combined.
2Add eggs, one at a time, beating well after each addition. Beat in ricotta cheese. Beat in flour mix. Spread batter in a pan that has been lightly sprayed w/ cooking spray.
3In another bowl, combine nuts, brown sugar, cinnamon, wheat germ and nutmeg. Sprinkle over batter in pan evenly. Cover, refrigerate 24 hrs. The next day, pre-heat oven to 350. Uncover cake and bake for 35-40 mins, or until a toothpick inserted in center comes out clean.
