This is great for the holidays. Just mix everything up the night before, then in the morning, bake it.

Ingredients

  • 2 cups flour
  • 1 cup whole wheat flour
  • 1-1/2 teaspoon baking powder
  • 1-1/2 teaspoon baking soda
  • 1 cup butter, softened
  • 1-1/4 cup sugar
  • 3 - eggs
  • 1 - 15 oz container part-skim ricotta cheese
  • 3/4 cup chopped walnuts
  • 1/2 cup packed light brown sugar
  • 2 tablespoons wheat germ
  • 1 tablespoon cinnamon
  • 1 teaspoon ground nutmeg

How To Make moist overnight coffee cake

  • Step 1
    In lg bowl, combine the flours, baking powder and baking soda. In another bowl, beat butter for 30 seconds. Add sugar, beat until combined.
  • Step 2
    Add eggs, one at a time, beating well after each addition. Beat in ricotta cheese. Beat in flour mix. Spread batter in a pan that has been lightly sprayed w/ cooking spray.
  • Step 3
    In another bowl, combine nuts, brown sugar, cinnamon, wheat germ and nutmeg. Sprinkle over batter in pan evenly. Cover, refrigerate 24 hrs. The next day, pre-heat oven to 350. Uncover cake and bake for 35-40 mins, or until a toothpick inserted in center comes out clean.
