Ingredients
- 2 cups flour
- 1 cup whole wheat flour
- 1-1/2 teaspoon baking powder
- 1-1/2 teaspoon baking soda
- 1 cup butter, softened
- 1-1/4 cup sugar
- 3 - eggs
- 1 - 15 oz container part-skim ricotta cheese
- 3/4 cup chopped walnuts
- 1/2 cup packed light brown sugar
- 2 tablespoons wheat germ
- 1 tablespoon cinnamon
- 1 teaspoon ground nutmeg

Step 1In lg bowl, combine the flours, baking powder and baking soda. In another bowl, beat butter for 30 seconds. Add sugar, beat until combined.

Step 2Add eggs, one at a time, beating well after each addition. Beat in ricotta cheese. Beat in flour mix. Spread batter in a pan that has been lightly sprayed w/ cooking spray.

Step 3In another bowl, combine nuts, brown sugar, cinnamon, wheat germ and nutmeg. Sprinkle over batter in pan evenly. Cover, refrigerate 24 hrs. The next day, pre-heat oven to 350. Uncover cake and bake for 35-40 mins, or until a toothpick inserted in center comes out clean.
