moist lemon cake

My Mother in-law gave me this recipe years ago..we love it. I hope you do too! The only thing I changed was adding more confectioner's sugar so that the glaze was thicker and stayed on the cake.

Ingredients

  • 1 box lemon cake mix
  • 1/2 cup sugar
  • 1/2 cup wesson oil
  • 1 cup apricot nectar
  • 4 - whole eggs

How To Make moist lemon cake

  • Step 1
    Combine all the ingredients with the cake mix. Beat for 6 minutes or until smooth. Bake in a greased bundt pan at 350 degrees for 45 minutes.
  • Step 2
    Remove the cake from the pan and cool. Glaze
  • Step 3
    Glaze recipe.....1 3/4 cup confectioner's sugar.( I add quite a bit more so that the glaze will be thicker) 1/4 cup lemon juice. * Mix together until smooth..drizzle on the cooled cake.
