This recipe was given to me by a friend. He said his mom used to make this and it is DELICIOUS.

  • 2 c
    white sugar
  • 4
  • 1 1/2 c
    canola oil
  • 2 1/2 c
    sifted white all-purpose flour
  • 1 c
    chopped walnuts (optional)
  • 2 tsp
    baking soda
  • 2 tsp
    cinnamon, ground
  • 2 tsp
  • 2 c
    shredded carrots
  • 1 c
    crushed pineapple (drained)

How to Make Moist & Delicious Carrot Cake


  1. Preheat oven to 350 degrees. Grease and flour a 9 X 13 pan.
  2. Mix all ingredients and pour into prepared pan. Bake for one hour.
    1 package cream cheese
    3 cups powdered sugar
    1/4 cup butter or margarine

    Mix together until smooth consistency and frost cake. Refrigerate until ready to serve.
