This recipe was given to me by a friend. He said his mom used to make this and it is DELICIOUS.

Ingredients

  • 2 cups white sugar
  • 4 - eggs
  • 1 1/2 cups canola oil
  • 2 1/2 cups sifted white all-purpose flour
  • 1 cup chopped walnuts (optional)
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon, ground
  • 2 teaspoons salt
  • 2 cups shredded carrots
  • 1 cup crushed pineapple (drained)

How To Make moist & delicious carrot cake

  • Step 1
    Preheat oven to 350 degrees. Grease and flour a 9 X 13 pan.
  • Step 2
    Mix all ingredients and pour into prepared pan. Bake for one hour.
  • Step 3
    FROSTING: 1 package cream cheese 3 cups powdered sugar 1/4 cup butter or margarine Mix together until smooth consistency and frost cake. Refrigerate until ready to serve.
