This is my "go to" recipe to use over ripe bananas. It is a nice moist cake loaded with banana flavor. It's REALLY tasty when iced with peanut butter icing!

Ingredients

1/2 c
margarine, softened
1/4 c
butter, softened
2 c
sugar
3
eggs
1 tsp
vanilla
3 c
flour
2 1/4 tsp
baking powder
1 tsp
baking soda
1 tsp
salt
1 1/2 c
mashed banana (2 large or 3 small bananas)
3/4 c
buttermilk

How to Make Moist Banana Cake

Step-by-Step

  • 1Heat oven to 350 degrees F. Generously coat a 9"X13" nonstick baking pan with cooking spray. Set aside.
  • 2In a large bowl, mix together (by hand) the margarine, butter and sugar. Mix well. Add the eggs and vanilla and beat until fluffy.
  • 3Add the mashed bananas to the margarine mixture and mix well.
  • 4In a separate bowl, combine the flour, baking powder, baking soda and salt.
  • 5Add the flour alternately with the buttermilk, ending with the flour mixture. Mix just until smooth after each addition.
  • 6Transfer to the prepared baking pan. Bake for 35-45 minutes or until cake springs back when tested with fingertip.

  • 8TIP: If you don;t have buttermilk substitute a mixture of 3/4 cup whole milk with 1/2 teaspoon vinegar or lemon juice added.
