I was cracking black walnuts one day on the asphalt in our driveway when my husband pulled up and said "How's my little nutcracker?". I soon went inside and came up with this cake for him.

butter, room temperature
1 c
sugar
1 1/2 c
brown sugar, firmly packed

eggs
8 oz
cream cheese, room temperature
1 c
sour cream
2 1/2 c
all purpose flour
1 1/2 tsp
baking powder
1 tsp
baking soda
1 tsp
salt
2 tsp
vanilla extract
1 1/2 c
black walnuts, finely chopped
1 lb
confectioners' sugar
1/4 c
milk
1 tsp
vanilla extract

How to Make Moe's Nutcracker Cake

Step-by-Step

  • 1Cream together butter and sugars until fluffy. Add eggs, one at a time.
  • 2Add cream cheese and sour cream.
  • 3Sift together flour, baking powder, baking soda, and salt.
  • 4Slowly add flour mixture to batter. Add vanilla and mix well. After well incorporated, add finely chopped black walnuts.
  • 5Pour into tube pan and bake at 335 degrees for 60-70 minutes. Cool and remove from pan.
  • 6Mix confectioner's sugar, milk, and vanilla. May have to adjust milk depending on thickness desired. Pour over cooled cake.
