I was cracking black walnuts one day on the asphalt in our driveway when my husband pulled up and said "How's my little nutcracker?". I soon went inside and came up with this cake for him.

Ingredients

  • 1 c
    butter, room temperature
  • 1 c
    sugar
  • 1 1/2 c
    brown sugar, firmly packed
  • 4
    eggs
  • 8 oz
    cream cheese, room temperature
  • 1 c
    sour cream
  • 2 1/2 c
    all purpose flour
  • 1 1/2 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1 tsp
    salt
  • 2 tsp
    vanilla extract
  • 1 1/2 c
    black walnuts, finely chopped
  • 1 lb
    confectioners' sugar
  • 1/4 c
    milk
  • 1 tsp
    vanilla extract

How to Make Moe's Nutcracker Cake

Step-by-Step

  1. Cream together butter and sugars until fluffy. Add eggs, one at a time.
  2. Add cream cheese and sour cream.
  3. Sift together flour, baking powder, baking soda, and salt.
  4. Slowly add flour mixture to batter. Add vanilla and mix well. After well incorporated, add finely chopped black walnuts.
  5. Pour into tube pan and bake at 335 degrees for 60-70 minutes. Cool and remove from pan.
  6. Mix confectioner's sugar, milk, and vanilla. May have to adjust milk depending on thickness desired. Pour over cooled cake.
