I was cracking black walnuts one day on the asphalt in our driveway when my husband pulled up and said "How's my little nutcracker?". I soon went inside and came up with this cake for him.

Ingredients

  • 1 cup butter, room temperature
  • 1 cup sugar
  • 1 1/2 cups brown sugar, firmly packed
  • 4 - eggs
  • 8 ounces cream cheese, room temperature
  • 1 cup sour cream
  • 2 1/2 cups all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons vanilla extract
  • 1 1/2 cups black walnuts, finely chopped
  • 1 pound confectioners' sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

How To Make moe's nutcracker cake

  • Step 1
    Cream together butter and sugars until fluffy. Add eggs, one at a time.
  • Step 2
    Add cream cheese and sour cream.
  • Step 3
    Sift together flour, baking powder, baking soda, and salt.
  • Step 4
    Slowly add flour mixture to batter. Add vanilla and mix well. After well incorporated, add finely chopped black walnuts.
  • Step 5
    Pour into tube pan and bake at 335 degrees for 60-70 minutes. Cool and remove from pan.
  • Step 6
    Mix confectioner's sugar, milk, and vanilla. May have to adjust milk depending on thickness desired. Pour over cooled cake.
