After leaving Starbucks with my daughter and our Mocha Coconut Frapachinno we came up with this cupcake recipe. It is hit with family and friends.

1 box
german chocolate cake mix
3 Tbsp
espresso powder, instant
1/2 Cup
shredded coconut
1/2 Cup
toasted coconut
carmel topping
chocolate topping
1 tsp
coconut extract
buttercream frosting

How to Make Mocha Coconut Cupcake


  • 1Prepare cake according to package directions except add espresso powder to water (called for in the mix) Add coconut. Bake in cupcake papers for 18 minutes at 350.
  • 2Make the standard buttercream frosting and add 1 tsp coconut extract. Frost cupcakes and drizzle with carmel and chocolate sauce and sprinkle with toasted coconut.
