After leaving Starbucks with my daughter and our Mocha Coconut Frapachinno we came up with this cupcake recipe. It is hit with family and friends.

- 1 box - german chocolate cake mix
- 3 tablespoons espresso powder, instant
- 1/2 Cup - shredded coconut
- 1/2 Cup - toasted coconut
- - carmel topping
- - chocolate topping
- 1 teaspoon coconut extract
- - buttercream frosting
How To Make mocha coconut cupcake

Step 1Prepare cake according to package directions except add espresso powder to water (called for in the mix) Add coconut. Bake in cupcake papers for 18 minutes at 350.

Step 2Make the standard buttercream frosting and add 1 tsp coconut extract. Frost cupcakes and drizzle with carmel and chocolate sauce and sprinkle with toasted coconut.
