- Prepare cake according to package directions except add espresso powder to water (called for in the mix) Add coconut. Bake in cupcake papers for 18 minutes at 350.
- Make the standard buttercream frosting and add 1 tsp coconut extract. Frost cupcakes and drizzle with carmel and chocolate sauce and sprinkle with toasted coconut.
