Just another way to make use of any left over coffee lol...

Ingredients

  • 2 cups cake flour
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/3 cup cocoa powder
  • 2 tablespoons instant coffee, decaffinated
  • 2/3 cup vegetable oil
  • 1/2 cup buttermilk
  • 1/2 cup water
  • 1 teaspoon almond extract
  • 2 - eggs
  • 1 1/2 cups sugar

How To Make mocha almond cake...

  • Step 1
    Heat oven to 350F. In a large bowl sift the first 6 ingredients.
  • Step 2
    Then add in the next 4 ingredients & mix well until smooth.
  • Step 3
    In a separate bowl beat the eggs until thick & foamy. Then gradually add in the sugar & continue to beat well.
  • Step 4
    Then fold into the batter & make sure not to over fold.
  • Step 5
    Then pour batter into 2 waxed paper lined 8-inch sqaure pans or one 13 x 9 inch oblong pan.
  • Step 6
    Bake for about 35 to 40 mins.
