classic mississippi mud cake recipe (sallye)

- CAKE
- 2 cups all purpose flour
- 2 cups sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 sticks butter
- 1/3 cup cocoa powder
- 1 cup water
- 1/2 cup buttermilk
- 2 large eggs, slightly beaten
- 1 teaspoon vanilla extract
- 8 ounces mini marshmallows
- FROSTING
- 1 stick butter
- 1/3 cup cocoa powder
- 1/2 cup buttermilk
- 16 ounces confectioners sugar
- 1 teaspoon vanilla extract
- 1 pinch salt
- 3/4 cup chopped nuts

Step 1Preheat oven to 350º Lightly grease 9x13 baking pan

Step 2CAKE DIRECTIONS: Sift flour, sugar, baking soda and salt into a medium mixing bowl. Set aside Melt butter in small sauce pan; when melted, add cocoa and water and bring to a boil Add boiling cocoa mixture to dry ingredients and stir until just combined Add buttermilk, eggs, and vanilla and stir until smooth Pour into greased pan and bake 35-40 minutes until toothpick inserted in center comes out clean Remove from oven onto cooling rack !!DO NOT REMOVE CAKE FROM PAN!! Sprinkle marshallows evenly onto hot cake

Step 3FROSTING DIRECTIONS: Melt butter in medium saucepan; when melted add cocoa powder and buttermilk Bring to boil, then remove from heat Add powdered sugar, vanilla and salt stirring until very smooth Pour over marshmallows on hot cake Sprinkle with nuts

Step 4This cake is best served warm with a big old scoop of Blue Bell Homemade Vanilla Ice cream Make this for special occasions as each slice contains a “gazillion” calories
