Ingredients
- 2 cups sugar
- 1 1/2 cups butter, softened
- 1 1/3 cups coconut, flaked
- 4 - eggs
- 2/3 cup cocoa, unsweetened
- 1 1/2 cups pecans, chopped
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 2 teaspoons vanilla
- 12 ounces marshmallow cream
- 3 3/4 cups confectioners' sugar
- 4 teaspoons evaporated milk
How To Make mississippi mud cake

Step 1Preheat oven to 350F (175C). Lightly grease on 13x9 baking pan.

Step 2Cream together 1/3 cup of cocoa, white sugar, and 1 cup butter until light and fluffy.

Step 3Add eggs and vanilla; beat well.

Step 4Mix flour, baking powder, coconut and pecans together.

Step 5Stir flour mixture into the egg mixture until combined.

Step 6Pour batter into the pan.

Step 7Bake for 40 - 50 minutes.

Step 8Smooth marshmallow cream over top of cake while still hot. Cool completely.

Step 9Ice with chocolate icing. To Make Icing: - Beat together confectioners' sugar, remaining cocoa, 1 tsp vanilla and 1/2c butter. - Continue to beat; add enough evaporated milk to make icing spread on the cake.
