Ingredients

  • 1 c
    crisco oil ( vegetable oil)
  • 1 3/4 c
    sugar
  • 1/3 c
    cocoa
  • 1 1/2 c
    flour
  • 1 small
    can angel - flake coconut
  • 4
    eggs, beaten
  • 3 tsp
    vanilla
  • 1 1/2 c
    pecans, chopped
  • Pinch
    of salt
  • 1 jar(s)
    marshmallow creme (not the largest size jar, it's a bit much)
  • ICING

  • 1 1/2 stick
    butter, melted
  • 1/2 c
    cocoa
  • 1 lb
    box confectioners sugar
  • 1/2 c
    pecans, chopped (or less)
  • 2 tsp
    vanilla
  • Pinch
    of salt
  • 1 -3 Tbsp
    half and half (if needed to make icing spreadable)

How to Make Mississippi Mud Cake

Step-by-Step

  1. Set marshmallow creme aside. Mix remaining ingredients well. Pour into greased and floured 10 x 13" pan. Bake at 350 degrees about 30 minutes.
  2. Remove from oven and spread with 1 jar Marshmallow Creme. Allow to cool. Spread with the following icing.
  3. Combine icing ingredients and spread on cooled cake. Cut into squares. ( The serving size I cut is usually smaller than I normally would serve because this is VERY rich, you can decide, Lol)
