miracle cupcakes

I got bored and experimented. This makes a slightly dense cupcake but it's a miracle because the are so tasty. They aren't overly chocolaty or even that sweet, but they do come out with a little sugary crust on the to.

Ingredients
- 5 - egg whites
- 1/2 ounce cocoa powder
- 4.8 ounces sugar
- 3 ounces flour
- 5 - egg yolk
- 1/2 ounce cocoa powder
- 1 teaspoon vanilla
- 2 ounces butter, softened
- 2 ounces sugar
How To Make miracle cupcakes

Step 1Whip the egg whites with a mixer until frothy. Add the cocoa powder, sugar and flour (first measures cocoa powder and sugar). Beat on high until glossy and medium stiff peaks form.

Step 2In bowl beat remaining ingredients. Beat about 5 minutes.

Step 3Lightly fold the egg whites into the yolks (a third at a time) until its all incorporated.

Step 4Pour into muffin pans lightly sprayed with cooking spray.

Step 5Bake at 300 degrees for 30 minutes. Turn off the oven and let sit in the oven for another 10-15 minutes.

Step 6Remove from pan and let cool before frosting if you want.
