My mother got this recipe from a neighbor lady from 1970's and we use it often. I skip the whipped topping and nuts...but these are a keeper!

How To Make minnie cheese cakes

Mix cheese and sugar together, add eggs and vanilla.

Put vanilla wafers into cupcake papers, then add 2 Table spoons of cheese filling.

Bake 20 minutes at 350 degrees. Top with pie filling when cool. When ready to serve, top with cool whipped topping and chopped nuts. (if desired)
