minnie cheese cakes
My mother got this recipe from a neighbor lady from 1970's and we use it often. I skip the whipped topping and nuts...but these are a keeper!

Ingredients
- 2 packages 8oz. cream cheese
- 1 cup sugar
- 2 - eggs
- 1 teaspoon vanilla extract
- 1 can 21 oz. can cherry,strawberry,blueberry,or pineapple pie filling.
- 18 - 18 vanilla wafers
How To Make minnie cheese cakes

Step 1Mix cheese and sugar together, add eggs and vanilla.

Step 2Put vanilla wafers into cupcake papers, then add 2 Table spoons of cheese filling.

Step 3Bake 20 minutes at 350 degrees. Top with pie filling when cool. When ready to serve, top with cool whipped topping and chopped nuts. (if desired)
