Ingredients

    cupcake liners
  • 24
    Vanilla Wafers
  • 2 pkg
    (8-ounce) cream cheese, softened
  • 3/4 c
    sugar
  • 2
    eggs
  • 1 Tbsp
    lemon juice
  • 1 tsp
    vanilla
  • 1 can(s)
    (20-21 0z) peach, blueberry, or sweet cherry pie filling
  • 1/2 c
    nuts (optional)

How to Make Miniature Cheesecakes

Step-by-Step

  1. Line cupcake pans with liners. Place a vanilla wafer in bottom of each liner. In small bowl, beat cream cheese, sugar, eggs, lemon juice, and vanilla until light and fluffy. Fill the liners 2/3 full with cheese mixture. Bake in preheated 375 degree oven for 15 to 20 minutes, or until set. Top each with spoonful of filling and 1 teaspoon of nuts. Chill
