This is a recipe from Allrecipes. I just love mini muffins. Something about them, seems to taste better. And, they are so cute...whatever, I know that sounds silly! Just make some & enjoy!

1/2 c
brown sugar, packed
1/2 c
white sugar
1 tsp
ground cinnamon
1/2 tsp
ground ginger
1/2 tsp
ground nutmeg
1 tsp
baking soda
1/4 tsp
baking powder
1/2 tsp
salt
2 large
eggs
1/2 c
melted butter
1 c
canned pumpkin puree
1 pkg
(6 oz) butterscotch chips

How to Make Mini Pumpkin Butterscotch Muffins

Step-by-Step

  • 1Preheat oven to 350°F. Grease mini-muffin pan with cooking spray.
  • 2Sift together the flour, white sugar, spices, baking soda, baking powder, and salt, in a large bowl.
  • 3Whisk together the eggs, melted butter, brown sugar, and pumpkin, in a separate bowl. Add flour mixture, to the egg mixture.
  • 4Stir in butterscotch chips; pour batter, into each cup, to about 3/4 full.
  • 5Bake, in preheated oven, until they test clean, with a toothpick, 10-12 minutes. Makes 48 muffins.
