- 1 3/4 cups all-purpose or unbleached all-purpose flour
- 1/2 cup brown sugar, packed
- 1/2 cup white sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup melted butter
- 1 cup canned pumpkin puree
- 1 package (6 oz) butterscotch chips
How To Make mini pumpkin butterscotch muffins

Step 1Preheat oven to 350°F. Grease mini-muffin pan with cooking spray.

Step 2Sift together the flour, white sugar, spices, baking soda, baking powder, and salt, in a large bowl.

Step 3Whisk together the eggs, melted butter, brown sugar, and pumpkin, in a separate bowl. Add flour mixture, to the egg mixture.

Step 4Stir in butterscotch chips; pour batter, into each cup, to about 3/4 full.

Step 5Bake, in preheated oven, until they test clean, with a toothpick, 10-12 minutes. Makes 48 muffins.
