mini magic fruitcakes
This recipe is very vintage around 1960 from the Bordens cookbook. You can add and subtract ingredients to suit your taste..but this recipe is very tasty- this recipe is from my Aunt Martha's recipe book given to me by her daughter, Margret Ann, my cousin, who herself is an excellent baker- she makes the best Springerles.

Ingredients
- 3/4 cup of " none such mince meat " by (bordens)
- 3/4 cup finely ground or chopped fresh or dried fruit ( cherries, pineapple or apples)
- 14 ounces can sweetened condensed milk(bordens)
- 2 large eggs,beaten
- 2 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 cup brown sugar,not packed
- 1 cup chopped nuts

Step 1Preheat oven to 350^. Line 24 cup mini muffin pan with foil or paper liners and spray with cooking spray. Set aside.

Step 2In a large bowl mix together the mince meat, and sweetened condensed milk and the eggs- until mixed well. In another large bowl combine the flour, baking soda,cinnamon and brown sugar;add the mixed fruit and nuts to the flour mixture and toss to coat them.

Step 3Add flour mixture to the egg mixture; mix just until blended. Fill mini cups 3/4 full with the batter, Bake for 35 minutes or until tested done with toothpick and the tops are golden.
