These mini loaves are so good and just the right size for gift baskets. I make them each year and add them to our sons' gift baskets.

  • 2 1/4 c
    all-purpose flour
  • 2 1/2 tsp
    baking powder
  • 1/2 tsp
  • 1/2 tsp
    gound cinnamon
  • 1/2 tsp
    ground nutmeg
  • 2
  • 1 c
  • 3/4 c
  • 1/2 c
    melted butter
  • 2 tsp
    vanilla extract
  • 2 tsp
    rum extract

How to Make Mini Eggnog Loaves


  1. In a large bowl, combine the flour, baking powder, salt, cinnamon and nutmeg. In another bowl, beat the eggs, eggnog, sugar, butter and extract; stir into the dry ingredients just until mositened.
  2. Pour into three greased mini loaf pans. Bake at 350° for 30 to 35 minutes or until a toothpick inserted near the center comes out clean.
  3. Cool for 10 minutes before removing from pans to wire racks.
  4. Note: If you don't want to do the mini loaf pans you can put it in a standard size one.
