These mini loaves are so good and just the right size for gift baskets. I make them each year and add them to our sons' gift baskets.

Ingredients
- 2 1/4 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon gound cinnamon
- 1/2 teaspoon ground nutmeg
- 2 - eggs
- 1 cup eggnog
- 3/4 cup sugar
- 1/2 cup melted butter
- 2 teaspoons vanilla extract
- 2 teaspoons rum extract
How To Make mini eggnog loaves

Step 1In a large bowl, combine the flour, baking powder, salt, cinnamon and nutmeg. In another bowl, beat the eggs, eggnog, sugar, butter and extract; stir into the dry ingredients just until mositened.

Step 2Pour into three greased mini loaf pans. Bake at 350° for 30 to 35 minutes or until a toothpick inserted near the center comes out clean.

Step 3Cool for 10 minutes before removing from pans to wire racks.

Step 4Note: If you don't want to do the mini loaf pans you can put it in a standard size one.
