Mini Crumble pumpkin spice muffins

I came up with this recipe over the weekend! I wanted to make a crumble but relized I was out of regular oatmeal so I used flavored instant. My kids loved these :-)

15 oz
pumpkin, canned or cooked
1 box
spice cake mix (not prepared)
3 Tbsp
sour cream
1 tsp
pumpkin pie spice
2 pkg
instant maple brown sugar oatmeal
1 tsp
2 Tbsp
cold cubed butter


1Preheat oven to 350 degrees. Line mini muffin pan with liners.
2With a fork mash instant oatmeal cinnamon and cold butter together making little crumbles. Seat aside.
3On low speed mix pumpkin sour cream ,cake mix and pumpkin pie spice together until smooth.
4Spoon muffin batter into liners filling half full. Take crumble gently pat down on top of batter. Bake for 15 minutes:)
