mini crumble pumpkin spice muffins

I came up with this recipe over the weekend! I wanted to make a crumble but relized I was out of regular oatmeal so I used flavored instant. My kids loved these :-)

Ingredients

  • 15 ounces pumpkin, canned or cooked
  • 1 box spice cake mix (not prepared)
  • 3 tablespoons sour cream
  • 1 teaspoon pumpkin pie spice
  • 2 packages instant maple brown sugar oatmeal
  • 1 teaspoon cinnamon
  • 2 tablespoons cold cubed butter

How To Make mini crumble pumpkin spice muffins

  • Step 1
    Preheat oven to 350 degrees. Line mini muffin pan with liners.
  • Step 2
    With a fork mash instant oatmeal cinnamon and cold butter together making little crumbles. Seat aside.
  • Step 3
    On low speed mix pumpkin sour cream ,cake mix and pumpkin pie spice together until smooth.
  • Step 4
    Spoon muffin batter into liners filling half full. Take crumble gently pat down on top of batter. Bake for 15 minutes:)
