How to Make Mini Cheesecakes
2Line muffin tin with liners.
3Place one vanilla wafer in each liner (if using mini muffin tin, break the wafer into 2 parts or use mini vanilla wafers).
4Mix cream cheese, vanilla, and sugar on medium speed until blended. Add eggs. Mix well.
5Pour over wafers filling 3/4 full
7Allow to cool (cheesecakes will puff up when baking, but sink back down while cooling)
9Top with fruit or pie filling.
