Ingredients
- 12 - vanilla wafers
- 16 ounces cream cheese, room temperature
- 2 - eggs
- 1/2 cup sugar
- 1 teaspoon vanilla
How To Make mini cheesecakes

Step 1Preheat oven to 350.

Step 2Line muffin tin with liners.

Step 3Place one vanilla wafer in each liner (if using mini muffin tin, break the wafer into 2 parts or use mini vanilla wafers).

Step 4Mix cream cheese, vanilla, and sugar on medium speed until blended. Add eggs. Mix well.

Step 5Pour over wafers filling 3/4 full

Step 6Bake for 25 minutes

Step 7Allow to cool (cheesecakes will puff up when baking, but sink back down while cooling)

Step 8Chill.

Step 9Top with fruit or pie filling.
