Mincemeat Cake



I make my own mincemeat using green tomatoes and raisins. There is no suet in my mincemeat.

  • 1/2 c
  • 1 c
  • 1 Tbsp
    orange zest
  • 1/2 tsp
  • 1 tsp
  • 1/2 tsp
  • 1 tsp
    baking soda
  • 1 pt
    mincemeat with juice
  • 2 c
  • 1/2 tsp
  • 2
    large eggs
  • GLAZE:

  • ·
    powdered sugar
  • ·
  • ·
  • 1/4 c
    chopped walnuts

How to Make Mincemeat Cake


  1. Cream together butter, sugar, and orange zest. Add each egg one at a time.
  2. Mix spices, soda and salt with the flour and add to the butter mixture alternately with the mincemeat. If needed, add enough water to make a smooth cake batter. Pour into a greased 9 x 13 pan and bake at 350 degrees 35-45 minutes until done. Cool and drizzle with a little glaze; top with chopped walnuts.
  3. Glaze:
    Combine a little Powdered Sugar, Vanilla and Milk, mix until smooth. Drizzle over warm cake and top with chopped walnuts.
