I make my own mincemeat using green tomatoes and raisins. There is no suet in my mincemeat.

Ingredients
- 1/2 cup butter
- 1 cup sugar
- 1 tablespoon orange zest
- 1/2 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1/2 teaspoon cloves
- 1 teaspoon baking soda
- 1 pint mincemeat with juice
- 2 cups flour
- 1/2 teaspoon salt
- 2 - large eggs
- GLAZE:
- - powdered sugar
- - vanilla
- - milk
- 1/4 cup chopped walnuts
How To Make mincemeat cake

Step 1Cream together butter, sugar, and orange zest. Add each egg one at a time.

Step 2Mix spices, soda and salt with the flour and add to the butter mixture alternately with the mincemeat. If needed, add enough water to make a smooth cake batter. Pour into a greased 9 x 13 pan and bake at 350 degrees 35-45 minutes until done. Cool and drizzle with a little glaze; top with chopped walnuts.

Step 3Glaze: Combine a little Powdered Sugar, Vanilla and Milk, mix until smooth. Drizzle over warm cake and top with chopped walnuts.
