minced meat coffee cake

This is a modern twist using minced meat. With an orange glaze on top, it is sure to be a hit! I have never made anything with minced meat and I love minced meat pies so I searched for a recipe I could make that was not a pie and found the photo on a site called Cookies on Friday and the recipe is from Coffee Cakes: 105 Wonderful Recipes by Lauri Bonn. I have my minced meat ready so I can not wait to try this!

Ingredients

  • 1 cup butter, softened
  • 1 1/2 cups sugar
  • 1 1/2 teaspoons vanilla
  • 1/2 teaspoon orange zest
  • 4 - eggs
  • 3 cups flour
  • 1 1/2 teaspoons baking powder
  • 2 cups mincemeat, home made or store bought
  • 1 cup powdered sugar
  • 2 tablespoons orange juice

How To Make minced meat coffee cake

  • Step 1
    Preheat oven to 350 degrees. Grease a 9” x 13” baking pan and set aside.
  • Step 2
    In a large mixer bowl, cream the butter and sugar until completely mixed, add the vanilla and orange zest. Add the eggs, one at a time, beating well after each addition. In a small bowl, combine the flour and baking powder and then slowly add this to the butter mixture.
  • Step 3
    Spread 2/3 of the batter into the prepared pan. Spread the mincemeat on top of the batter. Drop the remaining batter by spoonfuls onto the mincemeat. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  • Step 4
    Combine the powdered sugar and orange juice to make a glaze. Drizzle over the warm cake and serve.
