michiana cherry cake
This is a favorite local recipe made when the tart cherries are ripe in early summer. Everyone seems to love it. I remember this recipe from as far back as the 1970's. The cake is easy to make. Also, its really different than anything else in my recipe collection and I hope you like it, too. I hope to get enough cherries to make this Saturday and post a picture of it. Michiana is short for Michigan-Indiana and refers to the Southern Michigan- Northern Indiana area.

Ingredients
- CAKE:
- 1 1/4 cups all purpose flour
- 3/4 cup sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 tablespoon butter, melted
- 1 large egg, slightly beaten
- 1 teaspoon almond extract
- 2 cups fresh, pitted, halved tart cherries
- 3/4 cup chopped pecans
- SERVE WITH:
- - whipped topping for serving with baked cake
- - or ice cream with warm cake
How To Make michiana cherry cake

Step 1Preheat oven to 350 degrees. Grease a 9 inch square baking pan. Set aside. Mix together flour, sugar, soda, salt, and cinnamon in a large bowl. Mix remaining ingredients in another bowl. Combine all remaining cake ingredients (including cherries) in large bowl. Mix well.

Step 2Pour into prepared pan and bake for 45 minutes or until toothpick inserted in center of cake comes out clean. Serve warm with ice cream or cold with whipped topping.
