michiana cherry cake

This is a favorite local recipe made when the tart cherries are ripe in early summer. Everyone seems to love it. I remember this recipe from as far back as the 1970's. The cake is easy to make. Also, its really different than anything else in my recipe collection and I hope you like it, too. I hope to get enough cherries to make this Saturday and post a picture of it. Michiana is short for Michigan-Indiana and refers to the Southern Michigan- Northern Indiana area.

Ingredients

  • CAKE:
  • 1 1/4 cups all purpose flour
  • 3/4 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 tablespoon butter, melted
  • 1 large egg, slightly beaten
  • 1 teaspoon almond extract
  • 2 cups fresh, pitted, halved tart cherries
  • 3/4 cup chopped pecans
  • SERVE WITH:
  • - whipped topping for serving with baked cake
  • - or ice cream with warm cake

How To Make michiana cherry cake

  • Step 1
    Preheat oven to 350 degrees. Grease a 9 inch square baking pan. Set aside. Mix together flour, sugar, soda, salt, and cinnamon in a large bowl. Mix remaining ingredients in another bowl. Combine all remaining cake ingredients (including cherries) in large bowl. Mix well.
  • Step 2
    Pour into prepared pan and bake for 45 minutes or until toothpick inserted in center of cake comes out clean. Serve warm with ice cream or cold with whipped topping.
