- 2 cups all purpose flour
- 2 cups sugar
- 20 oz ounces crushed pineapple,undrained
- 2 - eggs,beaten
- 1 1/2 cups chopped pecans
- 8 ounces cream cheese, softened
- 1 stick butter, softened
- 2 cups confectioners sugar
- 1 teaspoon vanilla
How To Make mexican fruitcake

Step 1Combine first 6 ingredients and mix well.Pour into a 9x13 greased pan. Bake at 350 degrees for 45 minutes.

Step 2Mix cream cheese, sugar,butter and vanilla and ice while hot. Let cool.
