meme's lemon sunshine cake
I love experimenting with cake mixes, by adding different flavors, and other ingredients. I had a yellow cake mix in the cupboard, so I went through the fridge, freezer, and cupboards to see what I could do with the cake mix. That's how this cake came about. My granddaughter and daughter loved it and so they named it for me. I am Meme (grandma) and this is my Lemon Sunshine Cake! It might make you pucker, but it's a good pucker!

Ingredients
- 1 box yellow cake mix
- 1 package vanilla instant pudding
- 1/2 cup white sugar
- 1/2 cup crisco oil
- 4 - eggs
- 4 - lemons - juiced
- - lemon rind, grated from 2 lemons
- 3/4 cup water
- 1/4 teaspoon lemon extract
- 1 cup powdered sugar
- 1/2 cup lemon juice
How To Make meme's lemon sunshine cake

Step 1Heat oven to 345*

Step 2Grease and flour bundt pan.

Step 3Set aside the powdered sugar and the 1/2 cup lemon juice.

Step 4In mixing bowl combine the remaining ingredients. With mixer on low speed mix until all ingredients are incorporated. Pour into bundt pan and bake for 45-50 minutes. (time may vary according to your oven)

Step 5Meantime combine the powdered sugar 1/2 cup lemon juice and 2 tsps lemon zest. The mixture should be a bit runny so it will soak into the cake.

Step 6When the cake is done, let cool for 10 minutes then turn out on a cooling rack. While cake is still warm take the end of a wooden spoon or a skewer, and poke holes in the cake. Place a cookie sheet lined with aluminum foil under the cooling rack and gradually spoon the lemon mixture over the cake. When cake has cooled sprinkle with powdered sugar.

Step 7*I have also spooned the lemon mixture onto the bottom of the cake before I turn it out.
