This recipe was from my maternal grandmother. My mom & her sisters made it often growing up. My Aunt's daughters made it while they were growing up & still do to this day. They asked why we never made it growing up, I told them "with 11 siblings, we never had any left over mashed potatoes.

Ingredients

  • MASH POTATOE CAKE
  • 2 cups sugar
  • 2 - eggs
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 teaspoon allspice
  • 2 - squares bitter chocolate
  • 3/4 cup shortening
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon nutmeg
  • 1 teaspoon vanilla
  • 1 cup mashed potatoes
  • 1 cup milk

How To Make mashed potatoe cake

  • Step 1
    Preheat Oven to 375. Melt bitter chocolate. Cool. Mix sugar, eggs, spices. Add potatoes and milk and mix until blended. Add cooled, bitter chocolate. Pour into 2 greased and floured (or Pammed) 9" round cake pans. Bake at 375 for 25-30 minutes. Let cool completely. Top with icing made from confectioner's sugar, milk, vanilla.
  • Step 2
    Make icing from confectioner's sugar, milk, vanilla. If icing is too thick, add more milk a little at a time. If to runny, add more confectioners sugar. Spread icing in between layers. Before icing top of cake & sides, cut straws to insert into cake to hold rounds together. Ice top & sides.
