This recipe was from my maternal grandmother. My mom & her sisters made it often growing up. My Aunt's daughters made it while they were growing up & still do to this day. They asked why we never made it growing up, I told them "with 11 siblings, we never had any left over mashed potatoes.

Ingredients
- MASH POTATOE CAKE
- 2 cups sugar
- 2 - eggs
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 1 teaspoon allspice
- 2 - squares bitter chocolate
- 3/4 cup shortening
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon nutmeg
- 1 teaspoon vanilla
- 1 cup mashed potatoes
- 1 cup milk
How To Make mashed potatoe cake

Step 1Preheat Oven to 375. Melt bitter chocolate. Cool. Mix sugar, eggs, spices. Add potatoes and milk and mix until blended. Add cooled, bitter chocolate. Pour into 2 greased and floured (or Pammed) 9" round cake pans. Bake at 375 for 25-30 minutes. Let cool completely. Top with icing made from confectioner's sugar, milk, vanilla.

Step 2Make icing from confectioner's sugar, milk, vanilla. If icing is too thick, add more milk a little at a time. If to runny, add more confectioners sugar. Spread icing in between layers. Before icing top of cake & sides, cut straws to insert into cake to hold rounds together. Ice top & sides.
