Maria is an excellent baker All of her cakes are fabulous but this one is my personal favorite

Ingredients

  • 2 cups flour
  • 2 cups sugar
  • 1 teaspoon salt
  • 4 eggs
  • 2 teaspoons cinnamon
  • 3 cups grated carrots
  • 2 teaspoons baking soda
  • 1 cup chopped nuts
  • 1 1/2 cups olive oil

How To Make maria’s carrot cake

  • Step 1
    Preheat oven to 350 degrees
  • Step 2
    Sift together flour, salt, cinnamon & soda.
  • Step 3
    Combine sugar & oil.
  • Step 4
    Add eggs & beat well.
  • Step 5
    Add dry ingredients & blend completely.
  • Step 6
    Mix in carrots & nuts
  • Step 7
    Bake in greased & floured pans at 350 degrees for 50 minutes
  • Step 8
    Cool & frost
  • Step 9
    Bakers Frosting 5 Tbs Flour 1 Cup butter, 2 tbs vanilla, 1cup milk & 1 cup sugar
  • Step 10
    Blend four with milk over low heat til thick. Cool completely(cover top with plastic wrap. While cooling- cream butter & sugar & vanilla. Add milk mixture & beat at high speed for 5 minutes
