marge's pumpkin sheetcake

This is one of my favorites...it's easy, quick, moist and gets better with age. Everytime I make it, it's a hit!

Ingredients

  • 4 - eggs
  • 2 cups sugar
  • 2 cups flour
  • 2 teaspoons cinnamon
  • 1 cup oil
  • 1 cup libby's pumpkin
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • ICING
  • 1 small cream cheese, room temperature
  • 1/2 teaspoon vanilla extract
  • 1/4 cup butter, salted, softened
  • 2 cups powdered sugar
  • - milk, just enough to make smooth

How To Make marge's pumpkin sheetcake

  • Step 1
    Preheat oven to 350. Mix eggs, oil and pumpkin. Add all dry ingredients to this mixture. Blend well.
  • Step 2
    Pour into a greased sheetcake pan. Bake 20/25 minutes. Cool
  • Step 3
    Cream together, softened cream cheese, softened butter, vanilla and powdered sugar. Use a mixer and add a little milk, just to make smooth. Be careful - don't add much! You don't want soupy! Spread on a cooled cake. You're gonna love this!
