WITH MARDI GRAS COMING UP I GOT TO THINKING ABOUT THIS BREAD. HAVE MADE THIS FOR YEARS. ITS REALLY GOOD SERVED WARM WITH HONEY BUTTER. ENJOY!

Blue Ribbon Recipe

The carrots and pineapple make this bread so moist! And the Test Kitchen smelled amazing while this was cooking. The spices are perfect and the nuts add the right amount of crunch. De-lish! The Test Kitchen

    cooking oil
  • 2 c
    sugar

    eggs

    shredded carrots
  • 1-8OZ
    can of crushed pineapple (undrained)
  • 3 c
    all-purpose flour
  • 1 tsp
    baking soda
  • 3 tsp
    cinnamon
  • 1 tsp
    salt
  • 1 tsp
    vanilla
  • 1 c
    chopped pecans or walnuts

How to Make MARDI GRAS BREAD

Step-by-Step

  1. BEAT OIL,SUGAR AND EGGS WELL. ADD IN CARROTS AND PINEAPPLE WELL. SIFT DRY INGREDIENTS AND ADD TO OTHER MIXTURE. ADD VANILLA AND NUTS.
  2. GREASE AND FLOUR 2 LOAF PANS, DIVIDE BATTER AND BAKE AT 350 DEGREES FOR 1 HOUR OR TILL A TESTER COMES OUT CLEAN.


    BEST SERVED WITH HONEY BUTTER: 1 STICK OF REALLY SOFT BUTTER WITH AN 1/4 CUP OF HONEY MIXED WELL.
