With Mardi Gras coming up, I got to thinking about this bread. Have made this for years. It's really good served with warm honey butter. Enjoy!

Ingredients

  • 1 1/4 c
    cooking oil
  • 2 c
    sugar
  • 2
    eggs
  • 2 c
    shredded carrots
  • 1 can(s)
    crushed pineapple (undrained), 8 oz.
  • 3 c
    all-purpose flour
  • 1 tsp
    baking soda
  • 3 tsp
    cinnamon
  • 1 tsp
    salt
  • 1 tsp
    vanilla
  • 1 c
    chopped pecans or walnuts

How to Make Mardi Gras Bread

Step-by-Step

  1. Beat oil, sugar, and eggs well. Add in carrots and pineapple; mix well. Sift dry ingredients and add to the other mixture. Add vanilla and nuts.
  2. Grease and flour 2 loaf pans. Divide batter and bake at 350 degrees for 1 hour or until a tester comes out clean.
