With Mardi Gras coming up, I got to thinking about this bread. Have made this for years. It's really good served with warm honey butter. Enjoy!

A yummy breakfast treat and good enough for a light dessert. Moist, tender, and full of flavor, this bread has the flavor of carrot cake with pineapples and pecans added. We loved the pops of sweetness from the pineapple and the crunch of the pecans. Your kitchen will smell amazing while this bakes. De-lish!

20 MAKES 2 LOAVES
Ingredients
- 1 1/4 cups cooking oil
- 2 cups sugar
- 2 - eggs
- 2 cups shredded carrots
- 1 can crushed pineapple (undrained), 8 oz.
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 3 teaspoons cinnamon
- 1 teaspoon salt
- 1 teaspoon vanilla
- 1 cup chopped pecans or walnuts
How To Make mardi gras bread

Step 1Beat oil, sugar, and eggs well.

Step 2Add in carrots and pineapple; mix well.

Step 3Sift dry ingredients.

Step 4Add dry ingredients to the wet ingredients.

Step 5Add vanilla and nuts.

Step 6Grease and flour 2 loaf pans. Divide batter evenly between the pans.

Step 7Bake at 350 degrees for 1 hour or until a tester comes out clean.
