maple apple cake
I picked up this recipe at a farmers' market stall selling Ontario maple syrup. It's from the Ontario Maple Syrup Producers Association and I've made this cake/pie several times for family and church pot lucks. It always turns out deliciously. (The original recipe listed half the amounts for the cake batter ingredients and I followed the recipe to a T the first time I made it. But the quantity of batter was not enough to cover the apples, so I doubled them and the adjusted amounts are listed here.)

Ingredients
- 5 large cooking apples, peeled and sliced
- 1/2 cup pure maple syrup
- 2 tablespoons butter or margarine
- 2 - eggs
- 1 cup white sugar
- 1/2 cup butter
- 1 teaspoon pure vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup all purpose flour
- 1 cup whipping cream
- 1/4 cup pure maple syrup
How To Make maple apple cake

Step 1Preheat oven to 350 degrees F.

Step 2Grease a 10-inch pie dish (I prefer Pyrex glass dish).

Step 3Spread apples evenly in dish. Sprinkle with maple syrup and dot with 2 tbsp. butter.

Step 4In a medium bowl, beat eggs, sugar, butter and vanilla together until fluffy.

Step 5Add baking powder, salt and flour until blended.

Step 6Spread batter over apples and bake for 45 minutes or until apples are tender. Cool slightly.

Step 7Whip cream, drizzle maple syrup over top and fold in gently.

Step 8Serve cake warm and top with the maple whipped cream.
