Ingredients

  • 2 c
    mangoes, sliced
  • 2 Tbsp
    lemon juice
  • 1 Tbsp
    butter
  • 1/3 c
    brown sugar
  • 1/4 c
    butter
  • 3/4 c
    sugar
  • 1
    egg
  • 1/2 c
    milk
  • 1 1/4 c
    flour
  • 2 tsp
    baking powder
  • 1/4 tsp
    salt

How to Make Mango Upside Down Cake

Step-by-Step

  1. Pour lemon juice over mangoes and let stand 15 minutes.
  2. Melt 1 tablespoon butter in 8 inch cake pan or casserole. (Do not use iron skillet as mangoes will darken.)
  3. Add brown sugar and cover with mango slices.
  4. To prepare cake batter, cream butter; add sugar and cream; add beaten egg.
  5. Sift dry ingredients and add alternately with milk; pour over mangoes and bake 50 to 60 minutes at 375.
  6. When cake is done, turn upside down and serve while warm.
