Ingredients

  • 2 cups mangoes, sliced
  • 2 tablespoons lemon juice
  • 1 tablespoon butter
  • 1/3 cup brown sugar
  • 1/4 cup butter
  • 3/4 cup sugar
  • 1 - egg
  • 1/2 cup milk
  • 1 1/4 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt

How To Make mango upside down cake

  • Step 1
    Pour lemon juice over mangoes and let stand 15 minutes.
  • Step 2
    Melt 1 tablespoon butter in 8 inch cake pan or casserole. (Do not use iron skillet as mangoes will darken.)
  • Step 3
    Add brown sugar and cover with mango slices.
  • Step 4
    To prepare cake batter, cream butter; add sugar and cream; add beaten egg.
  • Step 5
    Sift dry ingredients and add alternately with milk; pour over mangoes and bake 50 to 60 minutes at 375.
  • Step 6
    When cake is done, turn upside down and serve while warm.
