How to Make Mango Upside Down Cake

Step-by-Step

  • 1Pour lemon juice over mangoes and let stand 15 minutes.
  • 2Melt 1 tablespoon butter in 8 inch cake pan or casserole. (Do not use iron skillet as mangoes will darken.)
  • 3Add brown sugar and cover with mango slices.
  • 4To prepare cake batter, cream butter; add sugar and cream; add beaten egg.
  • 5Sift dry ingredients and add alternately with milk; pour over mangoes and bake 50 to 60 minutes at 375.
  • 6When cake is done, turn upside down and serve while warm.
