mandarin orange cake with pineapple frosting
I doubled this and did in large pan for a crowd. However can be done as a one or two layer cake with icing in middle too.

- 1 box yellow cake mix
- half cup oil
- 4 large eggs
- 11 ounces mandarin oranges with juice
- 8 ounces cool whip
- 8 ounces crushed pineapple and juice
- 1 package instant vanilla pudding

Step 1mix cake, eggs, oil, oranges and juice together till smooth

Step 2can do as one layer or two. Bake till set ...cool

Step 3Icing... mix pudding with crushed pineapple and juice..fold in cool whip well. Spread on cake and you can garnish with extra mandarin oranges if you wish. Keep refrigerated till slightly before eating.
