mandarin orange cake - to die for

This cake is too good not to try, and yet so simple to make..mix in one bowl. I can't remember where I originally found the recipe, but it is sinfully delicious. The oranges are the secret ingredient, and are not detected in the finished cake. This cake is wonderful to take to potlucks... My photos

Ingredients

  • 2 - 6oz cans mandarin oranges, drained
  • 2 cups sugar
  • 2 cups flour
  • 2 - eggs
  • 2 teaspoons vanilla
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • TOPPING
  • 6 tablespoons butter
  • 6 tablespoons milk
  • 1 - 1/2 cups brown sugar
  • 1 cup chopped pecans, i used pecans and walnuts

How To Make mandarin orange cake - to die for

  • Step 1
    Preheat oven to 350 degree F. Have a 9 x 13 baking pan ready ( do not grease the pan ).
  • Step 2
    In a large bowl; beat the oranges , just till broken up.
  • Step 3
    Add the flour, salt, sugar, eggs, soda,vanilla and mix until all is blended well. ( Batter should be slightly runny ).
  • Step 4
    Pour into ungreased baking pan. Bake 350 degrees until cake is golden brown and bounces back when touched in middle. About 35 to 40 min ( mine took 35 minutes )....the time never is the same.
  • Step 5
    Make topping: In a small saucepan, bring all ingredients ( except for the nuts) to a slow boil; stir making sure all sugar is dissolved. Remove from burner, and set aside.
  • Step 6
    When cake is finished, poke holes with a toothpick, and add the nuts to the sauce. Pour the topping evenly over the hot cake.
  • Step 7
    It is to die for!
