mama robin's coffee cake
I've been making this coffee cake for years and it's still my favorite one of all. It takes a little time to make, but well worth the effort. Just perfect for a Sunday morning with a nice hot cup-o-joe!

Ingredients
- 1 1/2 cups all purpose flour (sifted)
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 - egg
- 3/4 cup sugar
- 1/3 cup butter, melted
- 1/2 cup milk
- 1 teaspoon vanilla extract
- STREUSEL
- 1/2 cup light brown sugar, packed
- 2 tablespoons butter, softened
- 2 tablespoons all purpose flour
- 1 teaspoon cinnamon
- 1/2 cup walnut pieces or pecan pieces (optional)
How To Make mama robin's coffee cake

Step 1Preheat oven to 375. Lightly grease 8x8x2 square or 9x1-1/2" round cake pan.

Step 2Prepare strusel mixture by combining ingredients in a small bowl and mixing with a fork until crumbly.

Step 3Batter: beat egg with mixer until frothy. Add sugar & butter and beat until blended. Add milk & vanilla. Stir in flour, baking powder & salt and mix thouroughly.

Step 4Spoon 1/2 batter into prepared pan. Sprinkle 1/2 of the strusel mixture evenly over batter. Spread remaining batter on top and sprinkle remaining strusel mixture over batter again.

Step 5Put pan on center rack in over and bake 25-30 min. or until toothpick inserted in center comes out clean.

Step 6When done, cool on wire rack for 15-20 min. Cut warm coffee cake into squares or wedges and serve immediately.
