luscious orange cake

This recipe is from Betty Crocker. I made it for the first time for Easter 2013. My husband could not stay away from it, and he normally can bypass desserts! It is moist and densely good with a frosting that is not too sweet.

Ingredients
- 1 box yellow cake mix
- 1/2 cup vegetable oil
- 1/2 cup chopped walnuts (optional)
- 1-11 oz can mandarin oranges, undrained
- 4 - eggs
- 1-20 oz can crushed pineapple, undrained
- 1 box (4 serving-size) instant vanilla pudding
- 1/2 - 1 teaspoons grated orange peel (optional)
- 1 cup thawed cool whip
How To Make luscious orange cake

Step 1Preheat oven to 350 degrees. Grease the bottom of a 9 x 13 pan.

Step 2In a large mixing bowl beat the cake mix, oil, walnuts, oranges and eggs on low speed for 30 seconds. Beat at medium speed for 2 minutes. Pour into pan.

Step 3Bake for 30 - 35 minutes or until a toothpick inserted into the center of the cake comes out clean. Cool completely, at least 1 hour.

Step 4Frosting: Stir together the pineapple, pudding mix and orange peel. Gently stir in Cool Whip. Spread on cake. Store tightly covered in the refrigerator.
